Notes

  • -  Excerpt from Les Stewart's film, "Mr. Steak: The Story of a Nevada Steer" (ca. 1965) that documents the branding, earmarking, inoculating, castrating, and wattling of calves in spring. Les's narration was recorded on July 7, 1982, by Margaret Purser and Carl Fleischhauer.
  • -  The longer film follows a calf from birth to death, and concludes with scenes of steaks being cooked and consumed. The film affords Les several opportunities to present a rancher's perspective on topics of public interest. Scenes of wildlife on the range, for example, demonstrate the compatibility of grazing with other uses of the land. Shots of a line camp remind audiences not to litter or vandalize. Footage from a slaughterhouse and supermarket calls attention to the sanitary preparation and inspection of beef from the United States.
